All you need is:
1 lb of Calf Pasture Farms, LLC ground beef
1 small onion, diced
1 bell pepper, diced
1-2 TBS of butter
1 can of enchilada sauce (10oz) we use red, but green would be good too
2 cups of shredded cheddar cheese
6-8 tortillas (we use EggLife tortillas)
Directions:
Preheat oven to 375 degree Fahrenheit
Melt butter on frying pan over medium-high heat, once melted add onion and pepper and cook until caramelized. Set aside.
In same frying pan, brown ground beef. Strain as needed. Return to pan and add enchilada sauce and 1 1/2 cups of shredded cheddar cheese.
Prepare 9x13 inch baking dish, spray with nonstick spray and/or line with aluminum foil.
Once cheese is melted and sauce is combined with beef, spoon desired amount of beef onto tortillas. Roll tortillas and place seam side down into baking dish (Our tortillas are very small, so I just folded and laid in dish).
Sprinkle remaining shredded cheese on top of enchiladas and bake for 15-20 minutes or until cheese is browned to preference.
